Romancing the Home: A (keto) summer cocktail

Summer… long hot days spent hanging out with friends, endless amounts of braais (barbecues), beach visits and, of course, cocktails! So deciding on our #romancingthehome challenge this week of a (keto) summer cocktail was a no-brainer!

My all time favourite cocktail is a mojito. Hands down. It just feels like summer to me – the tang of the lime with the sweetness of the sugar and the freshness of the mint is everything! However, I have recently embarked on a keto journey, in order to address some health issues that I have developed due to carrying too much weight. This meant that traditional mojitos were out of the question.

I did some research (on Pinterest of course) and am glad to report that mojitos are allowed on keto, with the simple adjustment of what you use as your sweetener! Yay! I followed this recipe from Tasteaholics and I think that it turned out pretty good 🙂

What I did:

  1. I bought a bottle of Bacardi white rum. Why did I choose Bacardi, you ask? Because I thought that the bottle was so pretty! This is how I shop!

  2. I bought the necessary limes, ice (which was in short supply on the hottest day of the year!) and some mint.
    I have a little mint plant, but I couldn’t bring myself to stripping it down. That’s how I landed up buying more! Does anybody else do that? Or am I the only crazy who doesn’t want to destroy their herb plants by actually using them?

  3. After squeezing a lime and muddling some mint, I carefully measured out the Bacardi. Ok, maybe I wasn’t so careful, but come on – it’s summer and I need to cope with the heat somehow!

  4. Add the Bacardi, sweetener and soda water to your glass and mix it all up. Et voila – a keto mojito!

That’s about it – a very easy cocktail that will fit into my lifestyle thanks to Tasteaholics!
