This week’s theme was flower’s with food… Now, as you know, I’m not a cook. I do like to bake though, so that was a start. I have the added complication that I have also just started keto. Right – bake and keto with edible flowers… you can see how this might have been a bit of a challenge for me!
I decided to approach this challenge in the same manner of how I usually approach challenges where I have no clue where to start – Pinterest! Luckily, it didn’t take me long to find some inspiration and to come up with a solution: Eton mess with pansies, using keto meringues!
Now, I have made meringues quite a few times before, I found that they are quite easy to make that they usually turn out relatively good. However, this was the first time that I was going to attempt to make keto meringues!Β I used this meringue recipe from What The Fat; it made me 1 pavlova shell and numerous mini meringues (the bulk of which were polished off by my daughter – she loved them! The only issue I had was that we don’t get Natvia here, so I used plain erythritol. I’m not sure if using Natvia would have made a difference, but I’m going to try out a few other recipes as well, just to check.
Back to the Eton Mess. With Pansies.
This is what I did (after I had baked the meringues):

- Add a dollop of whipped cream to a clean serving bowl or ramekin
- Take 5 or so mini meringues and crush them over the cream
- Cut up 2 – 3 strawberries and add to your mixture
- Sprinkle a handful of blueberries into the mix
- Grab a spoon and mix everything together
- Add mint, a whole strawberry and your pansies to create the final dish.
That’s it – as simple as that!
I will admit that this is the first time that I had even thought of adding flowers to food! This was all new to me!
