Easy summer desserts

Summer is here and we are celebrating with braais, picnics, garden parties… Outdoor living at it’s best! And what is a summer celebration without some easy summer desserts?!

Now, if you are anything like me, being in the kitchen may not be your strong point and you are always looking for an easy way out (just look at my history when it comes to food posts!).

I have another perfect solution for you, with just a little bit of help from my mother-in-law (thanks Ma) and Fair Cape Dairies! I present you with…

A trio of easy summer desserts

Are you ready for these recipes? I promise you that they are really, really simple! The best part (besides the sugar overload of course)? The kids can practically make them on their own πŸ˜€

The desserts can be made as family style serving, or as individual servings. I chose to do individual servings because I think they look snazzy πŸ˜‰

1. Strawberry Yoghurt Tart

Ingredients:Fair Cape Strawberry Yoghurt Tart - Sawdust and High Heels 001

  • 1 litre Fair Cape full cream strawberry yoghurt
  • 1 tin condensed milk
  • 1 packet strawberry jelly
  • 1 packet tennis biscuits
  • butter, melted

Method:

  • Crush tennis biscuits to create a base (I used my Milex Nutri 1200 blender for this, but you can just put them in a large plastic bowl and smash them with the base of a mug – very satisfying!)

  • Place biscuit mixture at the bottom of your (microwave safe) dish/ramekinsFair Cape Strawberry Yoghurt Tart - Sawdust and High Heels 004
  • Empty the tin of condensed milk into a large bowlFair Cape Strawberry Yoghurt Tart - Sawdust and High Heels 005
  • Add your yoghurt to the condensed milk and mix.Fair Cape Strawberry Yoghurt Tart - Sawdust and High Heels 006
  • Pour your mixture onto your biscuit base.Fair Cape Strawberry Yoghurt Tart - Sawdust and High Heels 007
  • Bake on full power in the microwave. Times will vary, but this is what I did:
    • 4 mins for family size serving
    • 60 seconds for 3 individual sized servings
  • Place in the fridge to set.
  • Once the tart(s) have set, make the jelly following the instructions on the box and pour a layer on the top of your dessert.

2. Chocolate Chip Yoghurt Tart

Ingredients:Fair Cape Chocolate Chip Yoghurt Tart - Sawdust and High Heels 001

  • 1 litre Fair Cape full cream vanilla flavoured yoghurt with choc chips
  • 1 tin condensed milk
  • 1 packet oreos
  • butter, melted
  • Flake chocolate for decoration

Method:

Exactly the same as for the strawberry yoghurt tart, with the exception of the jelly topping. Instead, add the crumbled flake chocolate for the finishing touch πŸ˜‰

3. Chocolate Mousse

Ingredients:Fair Cape Chocolate Mousse - Sawdust and High Heels 001

  • Fair Cape chocolate mousse
  • Fair Cape cream, whipped
  • Cherries and mint leaves for decoration

Method:

  • Remove chocolate mousse from fridge
  • Spoon into stemless wineglasses (Mine are from Totally Tea)
  • Top with whipped cream

An impressive trio of desserts that your guests will love. Seriously – my family were trying to devour these as we made them. Hubs, who is a chocolate mousse freak, loved the chocolate mousse. The strawberry yoghurt tart also has a huge dent in it from him! My daughter, who is such a fussy eater, adored the vanilla choc chip tart with the oreo base.
